We recommend using distilled or fresh RO + DI. Our favorite water from a store is Whole Foods RO + DI. However, our product is designed to work with demineralized water under 15 PPM.
During the development of the matrix we discovered the current understanding of GH/KH for remineralization is largely derived from lab grade minerals. We found certain trace elements and unrefined ions changed the cup profile in unique ways. Prompting us to disregard GH/KH as they were not a reliable metric of final taste profile.

Our current products are not safe for use in a traditional espresso machine. However, we have found the Mineral Matrix to excel in open or boiler-free machines when brewing modern style espresso preparations.
Our products are preserved in an airless chamber. This preserves the formula so completely that there is no expiration date and even shaking before use is unnecessary.
We recommend not shaking the bottle. Shaking can dislodge droplets held in the final stage of the vacuum system. When traveling, those droplets may collect inside the cap. This does not affect the vacuum system’s performance or the pump’s calibration.
We don’t recommend it. Barista Tears is meant to be added to water before the brewing process.
The bottle body is made from polypropylene (PP), the same durable type of plastic commonly used in car bumpers. It meets applicable FDA food-contact requirements for its intended use and is made without BPA or phthalates. The pump also incorporates a precision-calibrated spring made from hardened metal. PP is resin code #5 for recycling.
